Greek Chickpea Chicken Soup

Feeling under the weather? Try this flavorful, savory soup, with immune boosting ingredients such as chickpeas, spinach, cayenne pepper, turmeric, ginger, and more! Turmeric’s main active ingredient, curcumin, has anti-inflammatory properties and antioxidants that can help with allergies, colds, muscle soreness, and even joint pain such as arthritis.   • 2 cans garbanzo beans/chickpeas

  • 1 large onion

  • 3 tablespoons lemon juice

  • 1 tablespoon oregano

  • pinch of cayenne pepper

  • 1/2 teaspoon onion powder

  • 2-3 tablespoons olive oil

  • 2 cups cooked shredded chicken

  • 1 cup spinach

  • 3 tablespoons chicken soup base

  • 1 teaspoon turmeric

  • 1 cup chopped parsley

  • 2 large carrots, diced

  • 4 cups water

  • 1 tablespoon freshly grated ginger (or 1 teaspoon dried ginger)
