Suzie’s Meatball Soup Recipe

This Meatball Soup, a cafe favorite, features tender meatballs in a rich, flavorful broth that’s sure to hit the spot. Perfect for chilly days and cozy gatherings—let’s dive into comfort in a bowl!
Sauce Ingredients:
1 can diced tomatoes
2 cans tomato sauce
1 can crushed tomatoes
1 can tomato paste (if desired)
About 1-2 cups water
1 tablespoon beef base
2-3 tablespoons sugar
1 teaspoon garlic
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon oregano
1 teaspoon Italian seasoning
Sauté Ingredients:
1/8 teaspoon crushed red pepper (if desired)
1 cup diced onions
1 cup diced green peppers
1/2 pound hamburger meat or ground beef
1 tablespoon olive oil
Meatball Ingredients:
1 pound ground hamburger (or a mix of ground pork and beef)
1 egg, large
1/2 cup King Arthur or sifted flour
1/2 cup grated Parmesan
1/2 cup milk
1/2 teaspoon garlic
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon oregano or Italian seasoning
1/2 teaspoon paprika
1/8 teaspoon nutmeg
Instructions:
Preheat oven to 350°F
In a saucepan on medium heat, add olive oil and saute onions, green peppers, and half a pound of ground meat until the meat is just cooked. Set aside.
In a large pot, combine sauce ingredients and bring to a boil, then reduce to a simmer. Add sauteed ingredients.
Mix together meatball ingredients. Make small balls and place them on parchment paper or a baking sheet. Note: Dip fingertips in oil to roll the meatballs more easily.
Bake meatballs at 350°F for about 10-15 minutes.
Add baked meatballs to the sauce and sautéed ingredients.
Simmer until ready to serve.
