Suzie’s Meatball Soup Recipe

This Meatball Soup, a cafe favorite, features tender meatballs in a rich, flavorful broth that’s sure to hit the spot. Perfect for chilly days and cozy gatherings—let’s dive into comfort in a bowl!

Sauce Ingredients:

  • 1 can diced tomatoes

  • 2 cans tomato sauce

  • 1 can crushed tomatoes

  • 1 can tomato paste (if desired)

  • About 1-2 cups water

  • 1 tablespoon beef base

  • 2-3 tablespoons sugar

  • 1 teaspoon garlic

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 teaspoon oregano

  • 1 teaspoon Italian seasoning

Sauté Ingredients:

  • 1/8 teaspoon crushed red pepper (if desired)

  • 1 cup diced onions

  • 1 cup diced green peppers

  • 1/2 pound hamburger meat or ground beef

  • 1 tablespoon olive oil

Meatball Ingredients:

  • 1 pound ground hamburger (or a mix of ground pork and beef)

  • 1 egg, large

  • 1/2 cup King Arthur or sifted flour

  • 1/2 cup grated Parmesan

  • 1/2 cup milk

  • 1/2 teaspoon garlic

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1/2 teaspoon oregano or Italian seasoning

  • 1/2 teaspoon paprika

  • 1/8 teaspoon nutmeg

Instructions:

  1. Preheat oven to 350°F

  2. In a saucepan on medium heat, add olive oil and saute onions, green peppers, and half a pound of ground meat until the meat is just cooked. Set aside.

  3. In a large pot, combine sauce ingredients and bring to a boil, then reduce to a simmer. Add sauteed ingredients.

  4. Mix together meatball ingredients. Make small balls and place them on parchment paper or a baking sheet. Note: Dip fingertips in oil to roll the meatballs more easily.

  5. Bake meatballs at 350°F for about 10-15 minutes.

  6. Add baked meatballs to the sauce and sautéed ingredients.

  7. Simmer until ready to serve.
